Tomato Soup

Ingredients
Serves: 3
1 tbsp oil
1 onion
1 garlic clove
salt and pepper
1 vegetable stock cube
2x400g tin tomatoes

Method
Heat the oil in a large pan with a little butter, add the onion, garlic and celery stirring every so often until softened but not coloured.
Add the tomatoes, stock and season with salt and pepper and simmer for 30 minutes.
TOP TIP Serve with some warm bread!
