Tomato Soup

Ingredients

Serves: 3

1 tbsp oil

1 onion

1 garlic clove

salt and pepper

1 vegetable stock cube

2x400g tin tomatoes



Method

  • Heat the oil in a large pan with a little butter, add the onion, garlic and celery stirring every so often until softened but not coloured.

  • Add the tomatoes, stock and season with salt and pepper and simmer for 30 minutes.

TOP TIP Serve with some warm bread!
